Roasted Vegetables

Roasted vegetables are an easy, flavorful side dish—just toss with olive oil, season, and roast until golden and caramelized. Simple, healthy, and always satisfying!


Ingredients

Select your preferred veggies. Here are some ideas:

  • Sweet Potatoes/Yams

  • Red Onion

  • Turnips

  • Garlic

  • Carrots

  • Parsnips

  • Yellow Squash

  • Zucchini

  • Asparagus

  • Mushroom

  • Green Pepper

  • Red Pepper


Approximately 3 tablespoons of Olive Oil

Approximately 3 tablespoons of Balsamic Vinegar (optional)

Few drops of Red Hot sauce

Salt and White pepper to taste

Italian Seasoning or fresh herbs of your preference for garnish

Parchment paper

Preheat oven to 400 degrees Rinse and scrub veggies thoroughly as the dirt loves to hide. Chop vegetables into fork size or your preference.

Line 13x9 Roasting pan(s), or large Baking pan(s) with Parchment paper Arrange veggies on Parchment paper

In a separate bowl, mix Olive oil, salt, white pepper, Red Hot sauce, Balsamic vinegar, if desired. Pour Oil mixture over veggies and mix thoroughly. Adjust Oil if needed.

Roast for 10-15 minutes, stir veggies and roast another 10-15 minutes until desired tenderness. increase heat to “broil” for 5-10 minutes for a char if desired

Garnish with Italian seasoning or herbs of your choice. Enjoy!
